Abstract

Beer, preserving.-In pasteurizing beer, a smaller vessel is connected to the cask and is completely filled therefrom before heating, after which operation the apparatus is inverted and the cask refilled from the smaller vessel, so that subsequent filling-up of the barrel and loss of carbonic acid are avoided. In a suitable form of apparatus, Fig. 3, the barrel A, completely filled with beer, is connected to a receiver B by means of connexions C, shown in Fig. 7 and consisting of two cocks 1, 2, fixed to the receiver, which are closed after it has been filled with carbonic acid and connected to branches 5, 6 by unions 3, 4 fitted with fibre washers. The cock 2 communicates with the receiver by a pipe 6<a>, and with the barrel by a bend 6 on the socket 11, which is fitted by a union cap 12 upon the metal bung-hole rim 13, while the cock 1 communicates with the barrel by a long pipe 10 screwed into the branch 5 and surmounted by a jacket 15, of the same length as the threaded portion of the cap 12. The apparatus is placed upon the bottom of a frame D, Fig. 4, which is placed over the barrel and locked to the bottom. The frame is lifted by the links 19, inverted on pivots 20 and locked in position, and the cocks 1, 2 are opened, when the receiver is filled through the socket 11 and the pipe 6<a>, while the barrel receives carbonic acid through the pipe 10. The apparatus is carried to the pasteurizing-stove and cooling-reservoir, and is then rocked on the pivots 20 to cause absorption of the evolved gas. The apparatus is then set upright, when the barrel is filled through the pipe 10, the frame is removed, and the receiver removed by unscrewing the cap 12, the bung-hole being closed temporarily by a back-pressure valve or by the closing of an elastic disk 14, cut into sectoral flaps which slide off the jacket 15. The disk is held in a groove of a metal rim, and a metal bung is subsequently screwed on the rim 13.
