Abstract

10,903. Budde, C. C. L. G. May 12. Preserving milk, meat, fish, &c.-Milk, cream, meat, fish, vegetables, or other organic substances are sterilized at a temperature of 40‹-50‹ C., by treating them with such quantities of hydrogen dioxide that the enzymes contained in the milk &c. are able completely to decompose the hydrogen dioxide, liberating nascent oxygen, which effects the sterilization. Any excess of hydrogen dioxide may be decomposed by adding a sterile infusion of press yeast or other enzyme. Condensed milk may be similarly treated.
