Abstract

14,624. Christensen, H., and Hamann, R. June 16. Cocoa, extract of. Cocoa husks, which have been soaked in water or steam, are boiled with water, and the decoction is separated by a centrifugal separator, or by pressure or other means, and then concentrated in open pans or in vacuo to a solid or an almost solid consistency. The extract contains a large proportion of theobromine and the like, and may be used alone, or in the production of cocoa or chocolate preparations, or other sweetmeats.
