Abstract

1456749 Dehydrated potato granules AMERICAN POTATO CO 21 March 1974 [22 March 1973] 12571/74 Heading A2B Dehydrated potato granules are made by mixing at least partially mashed potatoes with a starch complexing emulsifier in an amount of 0.3-2.0% so as to coat the individual cells of the potatoes with emulsifier and granulating the mixture so produced by mixing with sufficient energy to break up agglomerates and expose new cell surfaces by injecting hot air onto the surfaces to dry the cells, whereby as the individual cells or minor agglomerates thereof become dry they are removed from the mixture by entrainment in the air and finally dried to a 7-8% moisture content. Specified emulsifiers are glyceryl monostearate, sodium stearyl fumarate, calcium stearoyl- 2-lactylate, sodium stearoyl-2-lactylate or a propylene glycol monoester. The temperature of the heated air is regulated such that the hottest air contacts the wettest mixture and vice-versa, and after entrainment in the air the larger agglomerates are returned to the mixture by expanding the flow area to reduce the airflow velocity above the mixture, thereby depositing the larger agglomerates back into the mixture. The emulsifier is preferably blended in at a temperature greater than the melting point of the emulsifier or as an aqueous colloidal dispersion of the same, optionally with 0.1- 1.0% by wt. of oil.
