Abstract

1425979 Preserving yeasts TRUMAN Ltd 31 July 1974 [3 Aug 1973] 37000/73 Heading A2D [Also in Division C6] A storable yeast composition comprises a suspension of yeast in an aqueous solution of mannitol, the concentration of mannitol being selected to maintain substantially equal osmotic pressures inside and outside the yeast cells. #-phenyl ethanol may also be present in the yeast composition as a bactericide. The composition may be prepared by suspending yeast cells in a solution of about 10% by weight to volume mannitol in distilled, sterilised water and adjusting the yeast concentration if necessary to about 1 x 10<SP>8</SP> cells/ml.
