Abstract
1409024 Food compositions animal feed EXXON RESEARCH & ENG CO 5 Feb 1973 5586/73 Heading A2B and A2D An intermediate moisture food product having a water content of 20-60% by wt., a water activity of 0.5-0.9, and pH of 3.5-8.0, has from 0.05-50% by weight of an additive which is a linear aliphatic 1, 2-diol having 4 to 15 carbon atoms in the chain, mixtures of said diols or esters of said diols having linear aliphatic acyl groups of 2 to 20 carbon atoms and mixtures of said diols and esters. The additive may be used in admixture with another osmotic agent such as salt, glycerol or sucrose. Suitable additives are 1, 3-butane diol optionally in admixture with 1, 3-butane diol 1-monoactonoate or 1, 3-octanediol 1-monopropionate, 1, 3- pentanediol, 1, 3-heptanediol and 1, 3-nonanediol. The additive may be incorporated in fuit, vegetable, meat, fish and poultry-containing foods, broths, sauces and pet foods.
