1386785 Mashed potato compositions FISONS LTD 19 July 1972 [23 July 1971] 34573/71 Heading A2B A calorie reduced mashed potato composition comprises (a) 60-80% dehydrated potato (b)7.5-15% cellulose flour, micro-crystalline cellulose, or a mixture thereof (c) 5-10% low D5 sodium carboxymethyl cellulose (d) 3- 10% high D5 sodium carboxymethyl cellulose, the percentages being by weight of dried composition. The D5 is the average number of substituted -OH groups per glucose molecule; high D5 is about 0.8 to 2.5 and low D5 is about 0.2 to 0.4. the composition may also include sodium chloride, an emulsifer e.g. glyceryl monostearate and sodium pyrophosphate, a texture improver, a butter or potato flavour, a preservative, and a vitamin, or a mixture thereof. It may also include edible gums such as guar and cargeenin, and proteins such as milk casein. The particle sizes may be such that they can pass through a B5100 mesh sieve. The composition may be made by dry mixing the ingredients, or adding them to the potato before it is dried. The dry composition may be packed in 2-16 ounce quantities in plastics sachets, and may be made into a mashed potato-like food by mixing with 4.5-6.5 parts by weight of boiling water.
