Milk, concentrating; spray evaporators. - In plant for producing milk powder by spraying milk into heated air, the air passes from the heating chamber to the evaporating-chamber through a neck the length and diameter of which are approximately Equal, and through the middle of which the milk inlet pipe passes. This construction is stated to prevent particles of milk from adhering to the walls of the drying chamber or reaching the radiators which heat the air, and being scorched. The milk is sprayed into the drying-chamber at a pressure of from 750 to 1500 lb. per sq. in. without previous concentration. In the form shown, the heating-chamber 2, containing the radiators 3 is formed with an expanding inlet portion 2a and contracting outlet portion 2<b> leading to a neck 4 of the shape described opening into the drying-chamber. The milk-inlet pipe 5 passes through the neck 4 as shown and terminates in a spraying-nozzle.
