1319439 Tea treatment CEYLON INSTITUTE OF SCIENTIFIC & INDUSTRIAL RESEARCH 20 Dec 1971 [22 Jan 1971] 59154/ 71 Headings A2B and A2D Cold tea extracts are prepared without the formation of 'cream', by the addition to a hot tea infusion (60‹C-110‹C) of 0.01%-5% (by wt. in gms, per 100 mls of the tea extract, the latter having a concentration of 0.5 to 3.0 gms per 50 ml of water) of one or more of the following compounds, a carbonate, bicarbonate, hydroxide, oxide, phosphate, polyphosphate, citrate, borate, and silicate of ammonium, lithium, sodium, or potassium. A stabiliser, to retard the sedimentation of tea extracts may be added, suitable stabilisers being alginic or pectic acid and cellulose. The tea extract may be preserved by the addition of salts of benzoic, sulphurous, gallic and sorbic acids. Anti oxidants such as ascorbic acid or butylated hydroxy anisole, may also be present.
