The method is commenced by passing the liquid down the tower at a rate sufficient to ensure that the height of the crest of the liquid phase on each baffle where the liquid phase overflows the edge of each baffle is stable and the crest is of substantially uniform height and is continuous along the said edge, so that the liquid phase overflows the edge of each baffle in a respective continuous curtain immediately adjacent said edge, and supplying the gas or vapour phase upwardly through the tower. The conditions of the process are chosen such that the liquid phase overflowing the baffle edges is dispersed into discrete droplets or froth by high velocity gas phase in the vertical spaces between adjacent adjacent baffles, and a decreased gas phase velocity is obtained in the open areas of the baffles permitting the major part of the liquid droplets as froth entrained in the ascending gas phase to coalesce and separate under gravity from the ascending gas phase. Examples relate to the steam stripping of gases from solutions. Examples also relate to stripping ethyl alcohol from sulphate and sulphite waste liquors with steam.
