Abstract

1277981 Shortening; margarine KAO SOAP CO Ltd 23 Feb 1970 [21 Feb 1969] 8552/70 Heading C5C A process for preparing shortening or margarine comprises the steps of mixing (A) 100 parts by weight of a system consisting of 50- 100 parts by weight of oil and fat and 0-50 parts by weight of water, the oil and fat consisting of a mixture of (1) oil and fat having SFI at 5‹ C. of 0-45 and SFI at 25‹ C. of 0-25, and (2) hardened oil having an iodine value of lower than 35, with (B) 6-20 parts by weight of one or more emulsifiers selected from the group consisting of (3) propylene glycol fatty acid esters and lactomonofatty acid esters, and (4) a mixture of the emulsifiers named in (3) with another emulsifier of fatty acid ester type or with lecithin, then in a first stage heating the mixture to above 50‹ C. and stirring the mixture to melt same, then in a second stage while continuing to stir the mixture cooling the melted mixture to a temperature lower than the point at which crystals are separated while undergoing stirring, then in a third stage quickly raising the temperature of the cooled mixture under vigorous stirring, then in a fourth stage tempering the composition at a temperature in the range of the melting point Œ 10‹ C. and then quickly cooling the composition. Examples describe the preparation of (Ex. 1) a margarine from cottonseed oil (IV 78), hardened rape oil (IV less than 1) propylene glycol monostearate, soybean lecithin, and rice bran wax; (Ex. 2] a margarine from corn oil (IV 69) hardened corn oil (IV 3), propylene glycol monostearate and lactomonoglyceride; (Ex. 3) a shortening from soybean oil (IV 90), hardened soybean oil (IV 5) propylene glycol monostearate and sorbitan fatty acid monoester.
