Heading B8C. [Also in Division A2] A stiff, fluent, aerated food product, such as whipped cream, is deposited on pastries, cakes, &c., or in closed cakes or sachets by means 22 comprising a pump 23 drawing a liquid product from an unpressurized container 26 or from a remote bulk container, and air through an adjustable valve 29, and delivering the mixture through a homogenizer or emulsifier 30 to a flexible hose 33 terminating in a dispensing device 35. The homogenizer and the means 22, which includes a refrigerated compartment 28 for the container 26 and an electric motor 24 for driving the pump, are as described in Specification 1,250,497. When the apparatus is to be used for filling cakes or sachets the dispensing device 35, consisting of a flexible bag with an open nozzle 37, is replaced by a hollow, stainlesssteel spear and the pump is controlled by a foot switch. One embodiment of spear comprises a nozzle with converging tongues 97 to provide delivery orifices, and a valve member 99 with guides 103 and drawn towards a seat 98 by a spring 101. A spring-loaded abutment 104 assists withdrawal of the spear from a cake. In modifications, the valve member 99 is a ball loaded by a compression spring, a self-closing resilient tube over the end of the spear replaces or supplements the valve member 99, a flexible bag interposed between the hose 33 and the spear enables the valve member 99 to be dispensed with, a fixed but adjustable abutment is provided in place of the abutment 104, and the spear has a heat-insulating outer sleeve. More than one spear may be supplied by a single pump and homogenizer, the spear or spears may be fixed, and the means 22 may be fitted with a device for heat-sealing satchets after filling. The satchets have nozzles for the subsequent extrusion of their contents.
