Abstract

[Also in Divisions C6 and H5] A method of making yogurt involves subjecting inoculated milk to a slow and gradual heating so as to bring the milk up to a temperature of about 42‹C at the end of about 7 hours or more and then maintaining the milk at this temperature for a sufficient time to allow the yogurt to form without any substantial deteriation of its desirable properties, e.g. for 5 hours or longer. Specified rates of heating are 2 to 10 calories per hour per litre of inoculated milk at 35‹C and 1-3 calories per hour per litre at 40‹C. The apparatus consists of a milk bottle 3, Fig. 1, surrounded by a layer of polyurethane foam 7 located between plastics inner and outer walls 5 and 4, respectively, and typically a 7-watt electric resistor 6 arranged adjacent the inner wall. The resistance of the resistor is so determined that when the milk temperature reaches 42‹C the heat it provides balances the heat loss of the apparatus and contents.
