Abstract

1,259,368. Starch gum confections and puddings. CORN PRODUCTS CO. 2 April, 1969, No. 17410/69. Heading A2B. [Also in Division C3] Puddings, packaged pudding mixes and gum confections comprise a granular, amylose-containing cereal starch (see Division C3) having a fluidity (as defined) of 30-80, not more than 0.15% by weight bound fat, no incipient gelatinisation (as defined), and the ability to set up to a clear, firm gel within less than 60 minutes after being cooked in combination with an aqueous sugar syrup. Gum confections are prepared by cooking a mixture of the starch and aqueous sugar solution, adding flavouring and colouring, moulding, allowing to set, removing from the moulds, and applying a coating of sugar. A pudding may be prepared by cooking a mixture of milk, sweetening agent, flavouring, and the starch, for a time sufficient to gelatinise the starch.
