The carbon content of molten sodium or steel or a furnace atmosphere is measured using a device comprising an enclosure 15 of a metal in which carbon is soluble and mobile at the operating temperature containing an electrolyte including carbide ions and a reference electrode 18 containing carbon, by measuring the potential difference between 15 and 18. For measuring the carbon content of liquid sodium, the enclosure 15 may be of iron, nickel or an alloy of iron or nickel. The electrolyte may be a 10 mol per cent solution of calcium carbide in calcium chloride. The inner electrode 18 may be of carbon dispersed in a metal matrix or pure graphite.
