Abstract

1,215,870. Concentration of jam; marmalade and other foodstuffs. SAFEWAY STORES, Inc. 22 July, 1968 [31 July, 1967], No. 34884/ 68. Heading BIB. Jams, marmalade or other hydrous foodstuff containing solids, is concentrated by feeding it continuously upwards through duct 56 to one end of a horizontal, heated plate 14 where the foodstuff forms a layer which is divided into sections and moved forward over the hot surface of the plate by travelling flights 45 attached to conveyors 32 while a partial vacuum is maintained in the sealed hood over the plate by connecting the hood to a condenser and a vacuum pump. Progressive evaporation takes place from the moving layer sections of the foodstuff, and the required concentrate is discharged through duct 60. Ducts 56 and 60 are fan-shaped; and the open upper end of each duct communicates with a corresponding slot extending across the heated plate. The plate, which may be made of stainless steel, is heated by a steam-jacket 16. The nights 45 may be made of nylon or other plastics material. The density of the product is controlled by a device (e.g. of the gamma ray type) inserted in the discharge line 62. This device may regulate the feed pump and the drive motor of conveyor 32.
