[Also in Division C2] Compounds of the formulae where Y is an isopropylidene radical; X<SP>+</SP> is a H<SP>+</SP> ion, alkali metal or NH 4 <SP>+</SP> ion, Z<SP>++</SP> is a cation of an alkali earth metal and n is 14 to 20 inclusive, when added to raw misces for baked goods prior to baking produce improved properties of prolonged freshness, fine texture, good colour and increased volume, in the final product.
