Abstract

1,189,003. Process cheese products. STAUFFER CHEMICAL CO. 23 May, 1967 [31 May, 1966], No. 23859/67. Heading A2B. In the preparation of process cheese products containing an emulsifiable amount of an alkali metal phosphate or an alkali metal or alkaline earth metal citrate or tartrate, or mixtures thereof, which cheese has a consistency suitable for extruding in a substantially uniform size and weight, wherein on or more types of cheese, including rework cheeses, are comminuted and mixed with the aid of heat and water, there is blended with the cheese a surfaceactive agent selected from: (a) a phosphorylated substituted or unsubstituted sorbitan fatty acid monoester or an alkali metal salt thereof, wherein the fatty acid contains from 12 to 18 carbon atoms; or (b) a phosphorylated substituted or unsubstituted polyoxyethylene sorbitan fatty acid ester or an alkali metal salt thereof wherein the average monomer chain length is from 4 to 50 and the fatty acid contains from 12 to 18 carbon atoms; or (c) a polyoxyethylene fatty acid ester werein the average monomer chain length is from 4 to 50 and the fatty acid contains from 12 to 18 carbon atoms; or (d) an alkyl or alkoxy substituted phosphate wherein the substituent contains from 12 to 18 carbon atoms; or (e) a substituted or unsubstituted monoglyceride wherein the fatty acid contains from 12 to 18 carbon atoms and the substituent is either an acetylated tartaryl or phosphoryl group; or (f) Lecithin; or (g) Lactylic stearate; or (h) mixture of two or more of the above.
