118,673. Fairweather, H. G. C., (Pacific Evaporator Co.). Sept. 5, 1917. Preserving fruit.-Relates to the preparation of evaporated fruit. The process is particularly adapted for the treatment of peaches and apricots, but other fruit, such as pears, may be similarly treated. The fruit is peeled, sliced, and subjected for a short time to a bleaching-agent, such as sulphur fumes. The bleached fruit, placed on trays, is then steamed with dry steam, but not for a sufficient time to break down the cells, and afterwards evaporated by a current of air of a temperature between 125 and 156‹ F.
