Abstract
1,170,081. Coated fat compositions. UNILEVER Ltd. 24 Feb., 1967 [4 March, 1966], No. 9526/66. Heading B2K. [Also in Divisions B8 and C5] Cooking fat used in confectionery processes where it is usual to cut portions from a block, is formed into a rod which is coated with a material preventing adhesion e.g. hard fat, edible protein or carbohydrate, the rod being cut to ready use portions and packed in a bag &c. Methods of preparing and extruding various fats are described the adhesion preventing material being showered on the rod as it leaves the extruder and is cut by a reciprocating wire. The cut lengths fall on a screen conveyer where excess coating falls away. Alternatively an air blast removes the excess. In one method of preparation of a pastry margarine, the emulsified fat at a temperature of 40‹-50‹C., is chilled by passing through an annular space between an outer chilled scraped metal surface and an inner surface, passed through a region where further crystallisation occurs and then is worked by passing it through fine orifices e.g. through screens. Alternatively chilling may be effected by feeding warm emulsion to a chilled rotary surface and scraping it off. The final outlet is a die plate through which the rods are extruded. The rods may be composite and have a matrix of flexible cooking fat with one or more cores of soft cooking fat, e.g. shortening, formed by extending the matrix through a main aperture surrounding die apertures for the cores.
