Abstract

1,154,079. Preserving foodstuffs. STAUFFER CHEMICAL CO. 22 Dec., 1967 [3 Jan., 1967], No. 58337/67. Headings A2B, A2D and A2Q. A method of eliminating or controlling the growth of bacteria in organic material comprises treating the material with a polyphosphate of the type:- where X is a hydrogen atom, an alkali metal (e.g. Na or K) atom or an ammonium radical, Y is an alkali metal (e.g. Na or K) atom or an ammonium radical and Nave represents an average chain length of 16-100. The material may be mixed, flooded or sprayed with or dipped in the polyphosphate, or packed in ice incorporating the polyphosphate or in containers the surfaces of which have been treated with the polyphosphate. The organic material may be potatoes, onions, tomatoes, poultry, meats, malt, grain, beef broth, cheese, egg whites, animal feeds, juices, beers, wines and refrigerated doughs. The polyphosphate may be used with other preservatives such as benzoates, propionates and sorbates. Eggs may be pasteurised after the polyphosphate treatment.
