Abstract
A readily-dispersible, water-soluble and edible composition comprises a finely-divided, watersoluble naturally-occurring vegetable gum or cellulose ether, and at least 0.001% dioctyl sodium sulphosuccinate, based on the weight of the gum or ether. The concentration of the sulphosuccinate may be 1%. The watersoluble cellulose ether may be hydroxypropyl methyl cellulose or carboxymethyl cellulose. The composition may be prepared by adding the sulphosuccinate to the finely divided gum or cellulose ether in the form of a solution in a solvent in which the gum or the cellulose ether is insoluble and then evaporating off the solvent. The solvent may be perchloroethylene. The gum may be gum Karaya or gum tragacanth.
