Abstract

111,142. Chambers, D. Nov. 13, 1916. Preserving fruit and vegetable substances.- Fruit, particularly apples, and vegetables are stored in a vermin-proof room A, Fig. 3, built in the orchard or plantation, and having a perforated floor B of iron sheet &c. raised above a prepared surface of earth. The earth is dug and sprinkled with a mixture of lime, sand, salt, and pitch blende. The room rests upon an iron framework F and is ventilated by perforated pipes W driven into the earth. The room is coated with a mixture of lime, salt, cloves, spice, and size. The fruit may be first steamed in a chamber L holding a kettle K on a stove and fitted with trays and shelves. The upper part of the steam chamber is of glass and has sleeves M at the top of rubber, canvas, &c. for the insertion of the operator's hands; a pipe P is provided for the exit of steam. The room is fitted with shelves and with a series of rods N. The fruit is pierced with wooden rods or aluminium wires T, Figs. 7 and 12, of different patterns having hooks for hanging them on the rods. Some fruits &c. after steaming may be enclosed in airtight and germproof paper bags or in airtight sterilized jars, Fig. 13, boxes, or bottles before they are hung on the rods. Very ripe fruits are treated with fumes from charcoal placed in a pan over the lamp in the steam chamber. Some fruits, after steaming, may be placed on the ground through a. trap-door H.
