Abstract

Fish is smoked and cured by transporting it in trolleys 11, 12, 13, 14, 15, 16 successively in stages into curing towers 1, 2, 3, 4 provided with vertically or horizontally slideable doors 5, 6, 7, 8, 9, adjustable ventilators 1b 2b, 3b, 4b and heaters 17, 18, 19, 20. A main curing bunker 20 supplies smoke via a main conduit 20a to tower 1 and via slide adjustable connections 20b, 20c, 20d to towers 2, 3, 4. Additional smoke producing devices 2a, 3a, 4a are also provided for towers 2, 3, 4. Towers 2, 3 include adjustable cover flaps 2c, 3c. Each tower 1, 2, 3, 4 may utilize a smoke or air circulating device, as shown for towers 1, 4 at 1a, 21. The device 21 may be used for introducing cooling air.
