Products such as foods and beverages in sealed containers such as cans, glass jars or aluminium vessels are continuously heat treated in at least one chamber containing treating liquid at the required temperature and maintained at an overpressure by a gas, whose pressure is maintained constant by at least one liquid-containing column through which the containers continuously enter into and emerge from the heattreating chamber. The liquid in the heating chamber is brought into contact with the containers by spraying, streaming, or by immersion. Several forms of the apparatus are described, each having a treating chamber through which the containers are moved by a conveyer and wherein the containers are subject to the action of hot sprays or mist and pressure due to the introduction of compressed air, the pressure being balanced by a corresponding height of hydrostatic column. As shown in Fig. 9, endless conveyer 2 carries containers down through entry water column 1, through treating chamber 5 where they are subjected to the action of jets 63 supplied by pump 60, with enough force to agitate the containers if desired, then out through exit water column 12. Compressed air is introduced at 33 under pressure sufficient to keep the water level in the treatment chamber at the level of the bottom edge 34 of one wall of the entry column. Any excess air bubbles up entry column 1 and escapes to atmosphere. In a modification, Fig. 6 (not shown), an arrangement is described for provided double columns for entry and for exit, whereby the physical height of the columns is halved. In other modifications, arrangements are described for maintaining pressures and water levels constant, notwithstanding the passage of large or small containers, by means of float-controlled valves.
