[Also in Divisions A2 and F4] In an apparatus for dehydrating fruit and vegetables comprising one or more endless conveyers arranged within a casing through which a stream of warm air is passed, each conveyer is formed of a series of perforated stainless steel plates 25 which are pivoted about horizontal axes perpendicularly to the direction of the conveyer, the plates being maintained in one plane, for example by support rails 27, so that the upper and lower runs of the conveyer form trays for the material to be dehydrated, except at the ends of the runs, where they pivot individually to drop the material on to the next lower conveyer run, the width of each plate in the direction of movement being related to the distance above the next run such that the falling material forms a substantially uniform bed. This width is less than 3 inches. Preferably the velocities of the conveyers decrease from top to bottom of the casing. Preferably several independently variable warm air sources and inlets are provided. The raw material is normally diced or sliced.
