Abstract

L'invention concerne notamment un procédé de refroidissement d’un liquide (L) qui consiste en du lait ou de l’eau, qui est contenu dans un réservoir de stockage et de refroidissement (1), à l’aide d’un équipement de refroidissement en circuit fermé comprenant un évaporateur (2), un compresseur (3), un condenseur (4) ainsi qu’un détendeur (5), circuit dans lequel circule un fluide réfrigérant (FF), ledit évaporateur (2) étant en contact d’échange thermique avec au moins une partie de la paroi de fond dudit réservoir (1), caractérisé en ce que : - ledit refroidissement est mis en œuvre de manière à atteindre une température de consigne à l’intérieur d’un créneau de temps prédéterminé ; - et que l’on pilote la puissance frigorifique du compresseur (3) en fonction d’une part de la quantité de calories à prélever dans ledit liquide (L) et, d’autre part, de la durée maximale de refroidissement souhaitée à l’intérieur dudit créneau, pour atteindre ladite température de consigne.
