- La fraction RS, correspondant au glucose non libéré après 120 minutes, qui se calcule selon la méthode Englyst par la formule suivante: TS – (RDS + SDS) où TS = amidon total (Total Starch considéré égal à 100 % lorsque les analyses sont réalisées sur l’amidon en tant que tel).This method then makes it possible to differentiate:

Ces amidons à haute teneur en SDS seront alors avantageusement mis en œuvre dans les domaines d’applications alimentaires (destinés notamment aux sportifs) ou médicale (nutrition spécialisée).
- L’invention sera encore mieux comprise à la lecture des exemples qui suivent, lesquels se veulent illustratifs en faisant seulement état de certains modes de réalisation et de certaines propriétés avantageuses selon l’invention, et non limitatifs.
- Exemple 1 : Détermination des conditions d’annealing d’amidon de pois les plus efficaces
- Au laboratoire, un lait d’amidon de pois dans de l’eau à 32 % en poids de matière sèche est préparé en introduisant un amidon de pois natif commercialisé par la société Demanderesse sous le libellé commercial N735 dans de l’eau déminéralisée à température ambiante et sous agitation douce.
- La température de ce lait est augmentée à une valeur variant de 50°C à 95°C (50°C, 60°C, 65°C, 68°C, 70°C et 80°C) pour étudier l’impact du traitement thermique sur la teneur en SDS obtenue.
- Le mélange réactionnel est maintenu sous agitation pendant 1 heure à cette température finale.
- Au terme de cette période, le lait d’amidon est récupéré, filtré à travers un filtre en verre fritté, puis séché. Il présente alors une humidité résiduelle de l’ordre de 13 % en poids
- [Fig. 1] La figure 1 présente le profil de digestibilité Englyst (1992), déterminé auxdites températures.
- On observe que le traitement avec une température d’annealing à une valeur ≥ 60°C conduit à augmenter la teneur en fraction RDS, concomitant au début du processus de gélatinisation de l’amidon.
- Le traitement à 50°C conduit à une augmentation de la teneur en SDS de la valeur de 33 % en poids pour l’amidon de pois natif, à une valeur de 44 % en poids pour l’amidon traité hydro- thermiquement, ce qui traduit donc bien une augmentation remarquable de 11 % en poids.
- La quantité d'eau joue un rôle important, et il est confirmé que l'absence d'eau ne modifie en rien le profil de digestibilité de l'amidon de pois.
- Des analyses de DSC sont également réalisées sur les produits des réactions d’annealing à ces différentes températures.

- Aucun changement n’est observé en absence d’eau (témoin étuve à 50°C).
- Le traitement d’annealing montre que le traitement à 50°C pendant 1 heure est le plus efficace, avec une augmentation de la température d’Onset d’environ 5°C après seulement 1 heure de traitement, une augmentation légère de la t° du pic de +2°C, et pratiquement pas d’évolution de la t°max.
- Le traitement hydrothermique est donc rapidement actif sur l’amidon de pois traité en phase lait.
- Exemple 2: Optimisation de l’augmentation de la teneur en SDS en contrôlant la fraction RDS à une valeur inférieure à 35 % en poids .
- Le procédé d’annealing est conservé tel que décrit précédemment. La température est affinée par rapport à celle présentée dans la figure 1 de sorte d’affiner la plage comprise entre ~50 et 60°C.
- [Fig. 2] La figure 2 présente les profils de digestibilité Englyst obtenus à différentes températures.
- Nous observons par cette expérience qu’il est possible d’augmenter de manière substantielle la fraction en SDS tout en contrôlant la fraction RDS < 35% en poids en jouant sur la température du traitement d’Annealing.
- Ainsi on observe qu’une température de 50°C est un compromis idéal pour la maîtrise du procédé tout en permettant d’atteindre la cible visée
- [Fig. 3] La Figure 3 présente les profils de digestibilité Englyst obtenus à différente matière sèche.
- Il est observé que l'augmentation de la quantité de matière sèche à des valeurs substantielles réduisait la capacité à produire une fraction de SDS plus élevée.
- La température d’annealing est fixée à 50°C, comme enseigné ci-avant.
- Le tableau 2 ci-dessous donne les teneurs en pourcentages en poids en RDS, SDS, RS et TS calculés selon la méthode ENGLYST.

- On observe que même après 20 minutes de traitement d‘annealing, le profil de digestibilité de l’amidon de pois évolue.
- Le meilleur équilibre est trouvé entre 1 et 6 h de traitement d’annealing.
- En mettant en œuvre ce procédé nous sommes en mesure comme présenté ci-dessous au travers de 2 lots d’amidon de pois natif, d’augmenter significativement la fraction SDS (+10 à 15% en poids) tout en contrôlant l’augmentation de fraction RDS (< 35% en poids).
- [Fig 4] La figure 4 présente cette augmentation significative de la fraction SDS tout en contrôlant l’augmentation de fraction RDS.
- The invention will be even better understood on reading the examples which follow, which are intended to be illustrative by only mentioning certain embodiments and certain advantageous properties according to the invention, and not limiting.
- Example 1: Determination of the most effective pea starch annealing conditions
- In the laboratory, a milk of pea starch in water at 32% by weight of dry matter is prepared by introducing a native pea starch marketed by the applicant company under the trade name N735 into demineralised water at a temperature ambient and with gentle agitation.
- The temperature of this milk is increased to a value varying from 50°C to 95°C (50°C, 60°C, 65°C, 68°C, 70°C and 80°C) to study the impact of heat treatment on the SDS content obtained.
- The reaction mixture is kept under stirring for 1 hour at this final temperature.
- At the end of this period, the starch milk is recovered, filtered through a sintered glass filter, then dried. It then has a residual humidity of the order of 13% by weight.
- [Fig. 1] Figure 1 shows the Englyst (1992) digestibility profile, determined at said temperatures.
- It is observed that the treatment with an annealing temperature at a value ≥ 60° C. leads to an increase in the RDS fraction content, concomitant with the start of the starch gelatinization process.
- The treatment at 50° C. leads to an increase in the SDS content from the value of 33% by weight for the native pea starch, to a value of 44% by weight for the hydrothermally treated starch, which therefore clearly reflects a remarkable increase of 11% in weight.
- The amount of water plays an important role, and it is confirmed that the absence of water does not alter the digestibility profile of pea starch.
- DSC analyzes are also carried out on the products of the annealing reactions at these different temperatures.

- No change is observed in the absence of water (control oven at 50° C.).
- The annealing treatment shows that the treatment at 50°C for 1 hour is the most effective, with an increase in the Onset temperature of around 5°C after only 1 hour of treatment, a slight increase in the t° of the peak of +2°C, and practically no evolution of the t°max.
- The hydrothermal treatment is therefore rapidly active on the pea starch treated in the milk phase.
- Example 2: Optimization of the increase in the SDS content by controlling the RDS fraction to a value below 35% by weight .
- The annealing process is retained as previously described. The temperature is refined from that shown in Figure 1 so as to refine the range between ~50 and 60°C.
- [Fig. 2] Figure 2 presents the Englyst digestibility profiles obtained at different temperatures.
- We observe through this experiment that it is possible to substantially increase the SDS fraction while controlling the RDS fraction < 35% by weight by varying the temperature of the Annealing treatment.
- Thus we observe that a temperature of 50°C is an ideal compromise for controlling the process while allowing the target to be reached.
- [Fig. 3] Figure 3 presents the Englyst digestibility profiles obtained at different dry matter.
- It is observed that increasing the amount of dry matter to substantial values reduced the ability to produce a higher fraction of SDS.
- The annealing temperature is set at 50° C., as taught above.
- Table 2 below gives the contents in percentages by weight of RDS, SDS, RS and TS calculated according to the ENGLYST method.

- It is observed that even after 20 minutes of annealing treatment, the digestibility profile of the pea starch changes.
- The best balance is found between 1 and 6 hours of annealing treatment.
- By implementing this process we are able, as presented below through 2 batches of native pea starch, to significantly increase the SDS fraction (+10 to 15% by weight) while controlling the increase in RDS fraction (<35% by weight).
- [Fig 4] Figure 4 shows this significant increase in SDS fraction while controlling for the increase in RDS fraction.
Claims (7)
1) Préparer un lait d’amidon à une matière sèche comprise entre 30 et 40 % en poids, de préférence 32 % en poids,
2) Chauffer le lait d’amidon ainsi préparé à une température de 10 à 15°C en dessous de sa température de gélatinisation,
3) Maintenir sous agitation le lait d’amidon ainsi obtenu à cette température pendant une durée comprise entre 45 minutes et 7 heures, de préférence entre 1 heure et 6 heures,
