Abstract
L'invention concerne un procédé pour la fabrication d'une denrée alimentaire transformée (1) de forme allongée, comprenant une enveloppe (2) formée de viande fumée et un cœur (3) formé par une garniture. Ce procédé de fabrication comprend les étapes successives suivantes : - une étape de fourniture d'une pièce de viande allongée (5), comportant deux extrémités (51, 52) définissant un axe longitudinal (5'), - une étape de salaison de ladite pièce de viande allongée (5), - une étage d'injection de la garniture (3) au sein de ladite pièce de viande allongée (5), laquelle étape d'injection comprenant une opération de perçage de ladite pièce de viande allongée (5) pour former un trou (55) s'étendant sur au moins une partie de la longueur de son axe longitudinal (5'), puis une opération de remplissage dudit trou (55) avec ladite garniture (3), - une étape de fumage de ladite pièce de viande allongée garnie (6), pour obtenir une denrée alimentaire transformée dont le cœur (3) formé de garniture est entouré par une enveloppe continue (2) formée de viande fumée.The invention relates to a method for the production of a processed foodstuff (1) of elongated shape, comprising a casing (2) formed of smoked meat and a core (3) formed by a filling.
