Abstract

Food composition comprises a puree, and a mixture stabilizer comprising a modified starch, a sucrose ester and a xanthan gum. Independent claims are included for: (1) a distribution device comprising a reservoir comprising the food composition and a gas propellant consisting of nitrogen protoxide or carbonic gas; (2) preparing a food foam comprising preparing the food composition and introducing in the reservoir of the device, dissolving the gas propellant in the food composition contained in the reservoir under pressure, and providing the food composition from the device in the form of food foam; and (3) the food foam to be prepared by the method.
