DOMAINE DE L'INVENTION La présente invention se rapporte à l'état de la technique antérieure utilisée par les boulangers-pâtissiers, lors de la division des volumes de pâtes fermentescibles mis en détente après la phase de pétrissage. ART ANTÉRIEUR ET PROBLÈMES POSÉS Les techniques de divisions actuelles peuvent se résumer aujourd'hui en 4 modes distincts : manuel, mécanique, hydraulique, volumétrique. Les inconvénients des méthodes actuelles : Toutes les méthodes proposées par les professionnels de l'équipement en 10 boulangerie-pâtisserie imposent un grand nombre d'opérations à l'utilisateur. De plus, les matériels mécaniques et ou électriques sont coûteux et en cas de panne provoquent des retards considérables dans la production quotidienne d'une boulangerie. Tous les systèmes utilisées aujourd'hui imposent à l'utilisateur de transférer sa pâte de son bac de pesage et de détente dans la cuve de la diviseuse 15 et cela pour des volumes de pâte pouvant aller jusqu'à 15 kg et plus. Toutes les diviseuses provoquent un dégazage excessif de la pâte d'une part ; par les manipulations de transfert et d'autre part ; par l'effet d'une pression sur le volume de pâte avant la division, cette pression entraînant un rejet volatil de poussières de farine dangereux pour l'utilisateur. Ces manipulations de la pâte entraînent 20 une interruption de la fermentation nuisible à la qualité organoleptique du produit et de ce fait un produit altéré pour le consommateur, elles sont épuisantes et nocives pour l'utilisateur confronté à la répétitivité de cette tâche tout au long de la journée.
