DETOXIFICATION DES PRODUITS CONTAMINES PAR DES MYCOTOXINES ET DES RESIDUS PHYTOSANITAIRES. Inventeur : Alain MIMOUNI La présente invention porte sur une méthode de décontamination et de détoxification des mycotoxines et des résidus phytosanitaires tels que le pyrimiphos, la deltaméthrine. L'invention trouve application dans le domaine des grains tels que les semences, céréales, riz, le sarrasin, café, fèves, légumes à cosse, légumineuses, fruits secs, légumes déshydratés, fruits à cosse, des produits déshydratés destinés à l'alimentation animale, et des céréales, en particulier le maïs, le blé, l'avoine, l'orge, le seigle ou de la semoule ou de la farine de ces végétaux, utilisés en alimentation humaine et animale. Ces produits agricoles sont généralement contaminés par une flore microbienne composée de bactéries sporulées, levures, moisissures, toxines telles que mycotoxines, et de 15 résidus phytosanitaires avant récolte. Les mycotoxines sont des molécules toxiques issues du métabolisme secondaire de certaines espèces de moisissures qui se développent sur un aliment. Les moisissures appartiennent principalement à trois genres, Fusarium, Penicillium, Aspergillus, présents dans le sol, l'air ambiant, et sur les cultures. 20 Les mycotoxines sont des contaminants naturels des céréales, qui peuvent apparaitre sur les graines de céréales au champ ou lors du stockage. La plupart des mycotoxines sont chimiquement stables et résistent aux changements de température, aux conditions de stockage et aux procédés de transformation. En raison de leur stabilité, les mycotoxines peuvent se retrouver dans les denrées alimentaires après transformation. Les mycotoxines se retrouvent donc 25 généralement dans les produits alimentaires élaborés à partir de céréales, comme le pain ou les céréales de petit déjeuner. Les mycotoxines ne représentent cependant un risque potentiel pour la sante humaine que lorsqu'elles sont absorbées en grande quantité. Le problème de sécurité alimentaire ne se pose donc qu'en cas de contamination massive des céréales, due en générale à de mauvaises 30 conditions de culture ou de stockage. Un des critères importants de la qualité sanitaire des céréales et autres produits agricoles stockés tels que le cacao, le café, les fruits secs, les fruits séchés, est la contamination en mycotoxines. La présence de moisissures et de toxines dans les aliments est devenue un sujet de préoccupation pour les professionnels de la santé ainsi que pour les opérateurs du commerce 1 international. C'est la raison pour laquelle des contrôles sont effectués sur les produits à risque importés dès leur arrivée sur le territoire français. En conséquence, il apparaît indispensable de prévenir les risques que représentent les mycotoxines et de les rabaisser à un niveau satisfaisant du point de vue réglementaire. DETOXIFICATION OF PRODUCTS CONTAMINATED BY MYCOTOXINS AND PHYTOSANITARY RESIDUES. The present invention relates to a method for decontaminating and detoxifying mycotoxins and phytosanitary residues such as pyrimiphos and deltamethrin. Certaines mycotoxines ont une toxicité aiguë très marquée (exposition unique à une forte dose), mais il est exceptionnel en Europe d'être exposé à des doses toxiques en une seule ingestion d'aliments contaminés. Historiquement, la mycotoxicose la plus anciennement connue est l'ergotisme. Il s'agit d'une pathologie également appelée feu de Saint-Antoine , feu sacré ou mal des ardents . Elle est provoquée par les toxines de Claviceps élaborées par l'ergot de seigle. Les symptômes se manifestent sous la forme de délires, prostrations, douleurs violentes, abcès, gangrènes des extrémités aboutissant à des infirmités graves et incurables. Des épidémies ont sévi du 8e au 16e siècle en raison des conditions d'alimentation misérables des populations, en particulier la consommation de farines contaminées par les sclérotes de ces champignons. En France, le dernier épisode épidémiologique majeur de ce genre s'est produit en 1951 à Pont Saint-Esprit, dans le Gard. Les effets chroniques (exposition répétée à de faibles voire très faibles doses) sont les plus redoutés en raison des habitudes alimentaires et du pouvoir de rémanence de ces toxines. La toxicité des mycotoxines est variable. Certaines toxines exercent un pouvoir hépatotoxique (aflatoxines), d'autres se révèlent oestrogéniques (zéaralènone), immuno/hématotoxiques(patuline,trichothécènes,fumonisines),dermonécro santes (trichothécènes), dnéphrotoxiques (ochratoxine A) ou neurotoxiques (toxines trémorgènes). Certaines mycotoxines sont reconnues ou suspectées d'être cancérogènes. En outre, plusieurs mycotoxines peuvent être présentes dans le même produit ou la même ration alimentaire. Pour les consommateurs humains, un autre type de risque est indirect car induit par la 30 présence possible de résidus dans les productions issues d'animaux d'élevage exposés à une alimentation animale contaminée par les mycotoxines. 3 Ces résidus de mycotoxines correspondent à la toxine elle-même et/ou à des métabolites bioformés conservant les propriétés toxiques du composé parental. Les espèces d'élevage peuvent donc constituer un vecteur de ces toxines ou de leurs métabolites dans des productions telles que la viande, le lait ou les oeufs. C'est le cas notamment de l'aflatoxine B1, dont le métabolite l'aflatoxine Ml est retrouvé dans le lait des mammifères lorsque ceux-ci ont ingéré des aliments contaminés par l'aflatoxine B1.Les mycotoxines sont généralement thermostables et ne sont pas détruites par les procédés habituels de cuisson et de stérilisation. Les animaux monogastriques d'élevage, volailles et porcs sont particulièrement exposés aux mycotoxicoses du fait de l'importance de la part des céréales dans leur alimentation et de l'absence du réservoir ruminai contenant des microorganismes capables de dégrader les toxines avant leur absorption intestinale. La susceptibilité des volailles aux aflatoxines a été à l'origine de la découverte de ces toxines après un épisode brutal d'hépatotoxicité létale survenu en 1960 dans des élevages de dindes en Grande-Bretagne. En revanche les applications n'impliquant pas de cuisson ou impliquant une cuisson différée, imposent des exigences plus sévères (farines incorporées à des préparations crues réfrigérées ou congelées, produits serai cuits, etc....) (POTUS et SUCHET, 1989), car si la flore banale ne constitue pas un risque pour la santé (cf. Guide des Bonnes Pratiques d'Hygiène en Meunerie), elle peut constituer une flore d'altération de la qualité microbiologique des produits. Certains traitements peuvent alors être utilisés pour la décontamination et la détoxification oxydative de nombreux grains, notamment les céréales mais aussi les fruits, noix, amandes, grains ,fourrages ainsi que les aliments composés et manufacturés destinés à l'alimentation humaine et animale. 5 De nouvelles technologies de décontamination des céréales font actuellement l'objet de travaux de recherche et développement, dont certains, comme le traitement à l'ozone, sont en phase de développement commercial. Les méthodes microbiologiques utilisent certaines souches de bactéries ou de levures pour dégrader les mycotoxines. Cependant les résultats obtenus ne sont pas probants, de tels 20 procédés ne permettent pas de réduire suffisamment le taux de mycotoxines pour observer un effet significatif sur la toxicité (Zinedine et al. 2007). Les traitements à base d'ammoniac sont couramment utilisés comme procédé chimique pour détoxifier les céréales (huwig et al., 2001). Le traitement des céréales à l'ammoniac est efficace pour la destruction des aflatoxines en particulier; de plus, c'est une procédure de 25 détoxification approuvée par les autorités de plusieurs pays (USA, France, Sénégal). L'inconvénient majeur de cette méthode est que l'ammoniac ne permet pas de dégrader efficacement les mycotoxines autres que les aflatoxines. En outre, la santé humaine peut être affectée, si des résidus d'ammoniac persistent dans le produit fini. L'ozone (03) peut aussi être utilisée comme procédé chimique de détoxification des 30 céréales (Mckenzie et al., 1997 ; Zinedine et al. 2007). Les mycotoxines présentent une sensibilité variable vis-a-vis du traitement à l'ozone. 6 De plus, ce procédé utilise de l'ozone gazeux difficile a produire avec de hautes teneurs en ozone et dont le coût de mise en oeuvre est élevé. Il peut également affecter les propriétés technologiques des produits céréaliers. Le peroxyde d'hydrogène est aussi utilisé dans un traitement chimique permettant de dégrader par oxydation les mycotoxines présentes dans les céréales. L'efficacité de ce traitement dépend du temps de contact, de la concentration en H2O2 et de la température. Il faut un temps de contact relativement long (8 à 16h) pour obtenir une réduction significative des mycotoxines sur les grains (Zinedine et al., 2007). Les méthodes physiques consistent à utiliser des matériaux absorbants (les aluminosilicates) permettant de neutraliser les mycotoxines (Huwig et al., 2001 ; Zinedine et al., 2007). L'efficacité de telles méthodes est limitée par la capacité de liaison des matériaux utilisés.
