Abstract
The present application relates to a novel treatment method for the protection of eggs by application of a composition comprising eugenol.
Description
11
The invention relates to a method for treating eggs by applying to said eggs a treatment composition based on eugenol, isoeugenol and / or clove oil. It is important that eggs do not lose their nutritional qualities and retain an attractive appearance when they are placed on the market. Phenomena that may affect the appearance and properties of eggs include weight loss during storage. It has been considered to apply a coating on the eggs to reduce their weight loss and maintain their internal quality, measured by several indices such as the height of the tube, the parameters of Haugh, the index of yellow and the pH of the white of the egg. Thus, Wong et al. (Poultry Science, 75, 417-422, 1996) found that zein-film-coated hen eggs were able to limit water loss and maintain Haugh parameter values during the storage period, in comparison with eggs treated with solutions containing egg albumin, soy protein isolate, wheat gluten and mineral oil. The coating also improved the shell's resistance to breakage by generating a protective barrier. Similarly, Alleoni et al., Sci. agr. (Piracicaba, Braz.) Vol. 61 No. 3, Piracicaba May / June 2004 evaluated these parameters in the case of a whey-based coating.
Parmi ces denrées, les produits de 2 Thus, the FDA advocates, for example, the use of mineral oils for the treatment of eggs. Similarly, the Food and Agriculture Organization of the United Nations recommends that eggs be covered with oil so that the coating fills the pores and reduces evaporation. The application can be performed by dipping the eggs in the oil. Odorless, colorless and low viscosity mineral oils can be used. If these are not available, other light mineral oils or any other cooking oil may be used for this purpose. Moreover, it is particularly important to protect the inside of the egg from possible contamination by bacteria, including salmonella. For many years, Salmonella has been the major cause of human digestive tract infections related to the consumption of food of animal origin. Of these commodities, the products of 2
Human infection with Salmonella Typhi is the cause of typhoid fever, an acute infectious disease. Nevertheless, the Enteritidis serotype is currently the most widespread in the poultry sector. Once a farm has been contaminated, it is very difficult to eliminate this contamination by conventional hygienic measures. The mechanism of transmission in eggs is still not fully understood, which constitutes a major obstacle for the development of new prevention and treatment measures (Van Immerseel et al., Median Med Vet 2005, 149, 34 -48). Several tracks have nonetheless been explored. Thus, after egg-laying, it is possible that the eggs are contaminated with S. Enteritidis through the eggshell when the egg is contaminated with feces (Gast et al., Avian Dis., 1990, 34, 438-446). Since the vast majority of human cases are from contaminated egg consumption, it is imperative that all measures be taken to reduce the levels of egg contamination. However, the means of struggle are limited. The decontamination of eggs using disinfectants, which aims to reduce the contamination of the surface of the eggs, is however in the European Community. To date, the main measure is to cool the eggs and maintain a cold chain to avoid the multiplication of Salmonella possibly present in the eggs. It is therefore particularly desirable to provide a method of treatment to prevent the contamination of eggs by salmonella or other bacteria. There is also a presumption that eggs may be infected with other contaminants, such as viruses, including bird flu. Avian influenza, or chicken flu, is an infection caused by a virus of the family Orthomyxoviridae that includes several genera (or types) including Influenzavirus A. This one is divided into subtypes among which the subtypes H5 and H7.
This infection can affect almost all bird species, wild or domestic. It can be highly contagious especially in chickens and turkeys, and is likely to cause high mortality in these species.
Seasonal influenza Low pathogenic strains of this virus can mutate genetically by spreading from one farm to another, especially if the sanitary barriers between farms are insufficient. From a certain virulence, these strains cause a disease called avian influenza, one of the most pathogenic is that caused by the H5N1 virus, likely to infect other animal species such as pork or other mammals. The epizootic of bird flu is when the disease suddenly affects a large number of animals in a given area.
4 Risks related to the H5N1 virus Of the 15 subtypes of avian influenza virus, H5N1 is the most disturbing for several reasons. It mutates rapidly and has a proven propensity to acquire genes from viruses infecting other species. Birds that survive this infection, excrete the virus for at least 10 days, orally and in the feces, which facilitates its spread in live poultry markets and by migratory birds. On the animal front, the recommended measures consist, initially, in quarantining animal foci affected by the avian virus. Then they must be slaughtered, as well as animals potentially exposed to the virus. As a human precaution, it is recommended not to consume poultry or undercooked egg products and to follow general hygiene rules. Nevertheless, there is to date no means of treating eggs 30 to prevent their possible contamination by the virus. 4
Furthermore, for the particular decontamination of foodstuffs, it is important that these compositions are nontoxic and acceptable in terms of food. Eugenol is a terpene derived from clove oil. The use of a composition containing eugenol for the treatment of fruits and vegetables after harvest in order to extend their shelf life has been described in application FR 98 08 995. The process described comprises the application of said composition. on fruits and vegetables. Furthermore, an anti-germinating potato method using eugenol has been described in application FR 98 15 305. The method comprises the application by immersion or showering of the composition or the application by thermal fogging to potatoes. . Nevertheless, its use for the protection of eggs has so far been neither described nor suggested.
The present inventors have now discovered, and it is one of the objects of the present invention, that eugenol, isoeugenol or clove oil unexpectedly presents an activity which makes it possible to improve the protection eggs. In fact, they have demonstrated that even very low concentrations of eugenol make it possible to improve the coatings usually used for eggs. On the other hand, they discovered that eugenol has a bactericidal activity quite interesting for the protection of eggs. Moreover, since eugenol is a product of natural origin, it is particularly suitable for the treatment of foodstuffs.
According to a first subject, the present invention thus relates to a method of treating eggs comprising applying to the shell of the egg a composition comprising eugenol, isoeugenol or clove oil. Said method can be implemented to reduce the weight loss of eggs, as anti-microbial treatment, especially for protection against Salmonella, or as an anti-viral treatment, for example to prevent contamination by the flu bird.
According to a first aspect, the treatment process is carried out using a polishing treatment composition based on wax, grease or oil comprising eugenol, isoeugenol or clove oil. Said wax, grease or oil may be chosen from any wax or oil usually used in the food industry for coating the eggs and may be chosen in particular from: mineral oils, especially in the form of an emulsion, for example the emulsions of mineral oil at approximately 20% in 70% water, ionic (for example in the presence of agents such as morpholine or alkanolamine oleate, at a level of 5 to 10%, preferably 8%, and sodium lauryl sulphate at a level of 1 to 5%, preferably 2%), or nonionic (by dispersing with Tween 80 and / or Span 80, at a level of 5 to 20%, for example at 10%); vegetable oils, especially in the form of an emulsion, any edible oil or zein, soy protein. The emulsions may contain emulsifiers that are either anionic (of the sodium lauryl sulphate type) or nonionic (ethoxylated fatty acids, ethoxylated fatty alcohols, natural deoiled lecithin, sucrose ester, Tween, Span). vegetable waxes (carnauba, candelilla), or coating agents such as lecithin, zein, or soy protein, especially in emulsion form. The emulsions may contain emulsifiers that are either anionic (of the sodium lauryl sulphate type) or nonionic (ethoxylated fatty acids, ethoxylated fatty alcohols, natural deoiled lecithin, sucrose ester, Tween, Span).
Generally, the treating composition based on wax, fat or oil comprising eugenol, isoeugenol or clove oil comprises: from 10 to 95%, preferably from 15 to 80% of wax, fat or oil, preferably a vegetable oil; from 0.1 to 40% of eugenol, isoeugenol or clove oil; from 0 to 40% of formulation agent (s) 6
It is particularly advantageous to use the composition diluted in water, for example softened water. Generally, the composition is diluted in a ratio of 1 to 2 to 1 to 3 in water, a dilution of 1/3 to 1/4. The diluted composition then contains: from 2.5% to 20% of wax, fat or oil, preferably a vegetable oil; from 0.025% to 10% of eugenol, isoeugenol or clove oil; from 0 to 10% of formulation agent (s) in water.
Lesdits agents de formulation sont de préférence des émulsifiants, préférentiellement non ioniques, tels que Tween, par exemple Tween 80, ou dérivés du cocoate tel que le cocoate de glycérol. Une composition diluée préférée contient : environ 16% de cire de carnauba ou de candelilla ; environ 4% de lécithine ; - environ 4% de Tween 80 ; environ 1% d'eugénol ; Said formulation agents are preferably emulsifiers, preferably nonionic, such as Tween, for example Tween 80, or cocoate derivatives such as glycerol cocoate. A preferred diluted composition contains: about 16% carnauba wax or candelilla wax; about 4% lecithin; about 4% Tween 80; about 1% eugenol;
La 7 Said wax, grease or oil may be applied by any known means. In particular, the composition according to the invention can be applied by spraying, immersion. Said diluted composition may be used in particular when washing the eggs, in particular by soaking, spraying or immersion. Said wax, grease or oil and / or solution may contain other agents or additives usually used. These may include agents of formulating agents such as agents reducing the evaporation of the active ingredient and surfactants or emulsifiers, etc. In the foregoing and the following, the percentages are by weight / volume relative to the total volume of the composition. In a second aspect, the process may be carried out by washing with a composition containing eugenol, isoeugenol or clove oil. The 7
Generally, said washing solution contains 5 to 20% eugenol, 2 to 10 soap, diluted in water. As soap, is meant an ionic soap such as sodium lauryl sulfate type, or nonionic type alcohol or ethoxylated fatty acid, at different levels of ethoxylation. The washing method is particularly advantageous for the disinfection of the shell of the egg.
According to a third aspect, the method according to the invention comprises the washing step 10 followed by the waxing step according to the two aspects previously discussed. This alternative is particularly advantageous insofar as the first step by means of the so-called polishing solution makes it possible to disinfect the shell while the second step consists in applying a so-called polishing composition based on wax and grease. or an oil comprising eugenol, isoeugenol or clove oil makes it possible to avoid re-infection of the egg by maintaining the bactericidal effect thanks to the antiperspirant effect of the wax. It is possible between the two stages to rinse the eggs in order to eliminate the washing residues. The formulation of the treating composition depends on its mode of application.
8 Agents reducing the evaporation of the active principle are known in the art and may be chosen in particular from water dispersible polyterpenes, glycerol esters of pine resin, shellacs, lecithins, sicative oils, polyvinyl alcohol, polyvinyl pyrrolidone, polyacrylates of alkali metals, gum arabic. The various surfactants or emulsifiers known per se. According to the present invention, "emulsifier" is understood to mean any type of agent usually used for this purpose, such as ethoxylated fatty alcohols, ethoxylated fatty acids, ethoxylated alkylphenols or any other nonionic product. 8
9 The surfactants preferably used in the context of the invention are anionic or nonionic surfactants. Examples of nonionic surfactants that can be used according to the invention are in particular: the condensation product of an aliphatic fatty alcohol, preferably C 8 -C 22, with a C 2 -C 3 alkylene oxide. The C2-C3 alkylene oxide may be ethylene oxide, propylene oxide, or a mixture of ethylene oxide and propylene oxide in any proportions. An example of such surfactants is the condensation product of lauryl alcohol (or n-dodecyclic alcohol) with 30 moles of ethylene oxide; the condensation product of an alkylphenol in which the alkyl chain is C8-C22 with a C2-C3 alkylene oxide. Here again, the condensation products with ethylene oxide, propylene oxide or a mixture of ethylene oxide and propylene oxide in any proportions are also advantageous. By way of example of such surfactants, mention may be made of the condensation product of n-nonylphenol with 10 moles of ethylene oxide; the condensation product of a C 8 -C 22 fatty acid with a C 2 -C 3 alkylene oxide, for example ethylene oxide or propylene oxide or a mixture of ethylene oxide; and propylene oxide in any proportions. These condensation products have an alkoxylated chain at the hydroxyl group of the carboxylic group. Preferred surfactants of this group are the condensation products obtained from ricinoleic acid with 10 moles of ethylene oxide. Examples of anionic surfactants that may be used according to the invention are in particular: water-soluble salts of long-chain alkyl sulphates, and in particular water-soluble salts of (C 8 -C 24) alkyl sulphates, such as alkali metal lauryl sulphates and more particularly lauryl sulphate; sodium; and the water-soluble salts of alkylarylsulphonates and in particular the water-soluble salts of (C 8 -C 24) alkyl- (C 6 -C 10) arylsulphonates, such as the dodecylbenzenesulphonates of alkali metals and more particularly sodium dodecylbenzenesulphonate. 9
The invention is however not limited to the use of these particular surfactants. The solvents that can be used in the treatment composition are chosen in particular from C 1 -C 12 aliphatic alcohols, glycols and alkyl esters of carboxylic acids. More specifically, the glycols designate, in the context of the invention, alkylene glycols and polyalkylene glycols. The term "alkylene glycol" means dihydroxy alcohols derived from aliphatic hydrocarbons by replacing two hydrogen atoms with two hydroxyl groups. (C2-C6) alkyleneglycol such as ethylene glycol and propylene glycol are preferred. The term "polyalkylene glycol" means the compounds of formula HO- (CpH2pO) n -H where p and n are integers between 2 and 6. By way of example, mention may be made of dipropyleneglycol. According to the invention, the CpH2pO group is linear or branched. The preferred polyalkylene glycol according to the invention is dipropylene glycol. The alkyl esters of preferred carboxylic acids are (C1-C6) alkyl esters of (C1-C6) alkanoic acid such as butyl acetate. When the treating composition comprises a food-acceptable salt, it may be introduced into the composition during its preparation as salt or in neutral form. In the latter case, the salt is formed in situ by addition of a suitable base, such as an alkali metal hydroxide (soda or potash). The amount of the solution according to the invention to be applied depends essentially on the selected application method. More generally, the amount of active ingredient is adjusted as a function of the storage time. The treating compositions are prepared in a conventional manner by simple mixing of their constituents, optionally with stirring. The compositions according to the invention must be applied one or more times.
In an advantageous aspect, a treatment is carried out just after the laying. The composition may in particular be applied by spraying or immersion.
Avantageusement, la composition est appliquée à température ambiante, niais elle peut également être appliquée à chaud, à température comprise entre 40 et 60 C. Advantageously, the composition is applied at room temperature, but it can also be applied hot, at a temperature between 40 and 60 C.
The treating composition is conventionally prepared in itself by simple mixing of its constituents.
When the treatment composition comprises a salt which is acceptable in terms of food, it may be introduced into the composition, during its preparation, in the form of salt or in neutral form; in the latter case, the salt is formed in situ by addition of a suitable base such as an alkali metal hydroxide (soda or potash). The food acceptable salts may be in particular alkali metal salts such as sodium salts, lithium salts or potassium salts.
In general, about 50 g and 5 kg of solid composition equivalent per ton of treated egg are applied. More generally, the amount of composition applied is adjusted as a function of the storage period. Eugenol and isoeugenol being odorous products, it is preferable that after storage, the majority of the active ingredient has evaporated so as not to alter the commercial value of eggs when they are placed on the market. The amount of active ingredient to be applied therefore depends on the volatility of the active ingredient used and the storage time. The application can be continuous or intermittent during the storage period.
