Abstract

Improvement to baker's ovens allowing heating by electricity of the whole oven during periods when this electricity is inexpensive, whilst also allowing the whole oven to be heated by gas or fuel oil during the other periods. It is characterised by the place of electric elements (resistors) (1) in the air flow of ovens with recycling (multi-deck ovens and trolley ovens), and around the hearth (steam oven) whilst retaining, without modifying them, the gas or oil-fired heating devices (3).
