Le procédé selon l'invention consiste à utiliser du sucre blanc, du glucose, de l'eau, un ou plusieurs colorants, caractérisé par le fait que le produit est réalisé en faisant
- fondre le sucre blanc dans l'eau, en ajoutant un ou plusieurs colorants,
- l'ensemble ayant fondu, le produit est porté à ébullition, puis le glucose est ajouté,
- le produit est alors cuit entre 135"C et 138"C, suivant le parfum qui sera utilisé,
- le produit (sucre cuit) est coulé sur un marbre huilé entre des barres de fer ; il faut attendre quelques minutes,
- ajouter de l'acide citrique, ainsi que le parfum choisi (de préférence des essences grasses pour éviter toute évaporation),
- enlever les barres de fer, rabattre les quatre coins (tant que la pâte est encore malléable), pour y enfermer le parfum,
- à l'aide d'un triangle, faire passer le produit sur un autre marbre froid,
- dès que le produit est d'une chaleur supportable, le travailler et le "tirer", de manière à ce qu'il prenne du volume et de l'air,
- à une température de 30"C à 40"C, le produit est tiré en bandes d'environ trois mètres,
- laisser refroidir quelques heures (de préférence une nuit),
- le produit est alors consommable, le sucre s'est massé seul, il est devenu un sucre fondant.The state of the art can be defined by the following patents
