Abstract
Description
The present invention relates to a process for treating an aqueous extract of soya in order to separate it into a concentrate with a high dry matter content and a diluted liquid.
In order to obtain the proteins and the lipids contained in the soybeans for human or animal consumption, one begins to carry out a treatment which first comprises a fine grinding of the seeds. This grinding can be done in the presence of water or dry. In the latter case, the ground material is then mixed with water. Whatever the mode of grinding, an aqueous suspension is thus obtained, which is sometimes qualified as "soy milk" but which has little in common with milk except the appearance. This suspension is subjected to coarse filtration to remove fibrous residues and other particles larger than about 100 micrometers. The filtrate can be heated for a short time to a temperature above 100 C to obtain a more digestible product.
A second filtration on membranes must then be carried out to separate a concentrate containing the major part of the proteins and lipids from an aqueous filtrate. The product obtained can be used as for food, but it still contains a significant amount of water.
Usually, the treatment then comprises a coagulation of the concentrate carried out at a temperature between 60 and 1000C in the presence of a coagulating agent.
This coagulation is followed by separation by decantation of a "curd" and a "serum", which can be added to the previously obtained filtrate; the curd is finally pressed and then conditioned.
It has been found, unexpectedly, that the yield of the process could be significantly improved if the filtration was carried out continuously and at high pressure and temperatures. In addition, this new filtration process allows an advantageous modification of the usual process; it is no longer necessary to concentrate the aqueous extract by filtration before coagulation, which the prior art required in view of the very rapid clogging of the filters by the coagulated extract.
Conventionally, the bodies used for the tangential filtration of food products, such as milk, consist of organic membranes, of the hollow fiber type for example, but it has been found that filters of this type are not suitable for treatment. soy extracts. In fact, they cannot resist strong overpressures and their yield drops rapidly; they can only be used at temperatures close to room temperature, finally they are difficult to clean and practically they cannot be sterilized.
The object of the present invention is to solve this problem and to provide a process for treating aqueous soy extracts, making it possible to obtain a product rich in proteins and non-denatured lipids, with low water content and water-soluble products, which consists of tangential filtration under given conditions of temperature and pressure on a particular porous body, an operation preferably preceded by coagulation, which improves the yield.
According to the invention, a porous body made of mineral material with a pore diameter of between 0.05 and 1 μm is used for filtration.
Preferably, the mineral material consists essentially of metal oxides, advantageously alumina, zirconia or alumina-zirconia.
Such porous bodies are currently commercially available, in particular in the form of cylindrical blocks pierced with channels. These blocks are formed of a coarse (for example) mass of alumina which serves as a support for the filter material of well-defined porosity, which constitutes the internal coating of the surface of the channels. Such blocks are very resistant to overpressure in the tubes, and they are easily sterilizable by heating.
Preferably, the diameter of the pores of the porous body is between 0.08 and 0.8 micrometer.
According to an advantageous modality, a coagulation is carried out by heating the extract, freed of coarse debris, between 35 and 100 C for approximately 20 minutes before operating the tangential filtration, this coagulation is carried out in a conventional manner, in the presence of an agent. coagulant, such as delta-gluconolactone, calcium and magnesium chlorides, and citric and lactic acids, or enzymes, calcium chloride being preferred because of its low cost and efficiency. The temperature of the coagulation depends on the agent chosen.
The prior coagulation clearly improves the filtration yield, whereas in the prior art, it was prohibited because of the rapid clogging of the filter.
It is preferable to operate the filtration at a temperature between 60 and 1000C. The viscosity of the suspension is then reduced and the yield is improved. The two operations can be combined by operating the filtration without prior cooling, after coagulation, which provides energy savings and above all avoids poorly controllable aging of the coagulated suspension before filtration.
In addition, filtration will be carried out at a minimum pressure of approximately 1.5 bars and will be increased to 3.5 bars to 5 bars at the end of the operation, taking into account the pressure drops in the porous body.
If the final product is intended for food, it is advantageous for it to be sterilized, in particular to allow prolonged storage. This sterilization can be done, conventionally, at the end of treatment. The method according to the invention allows the use of another sterilization method; the soy milk is sterilized on the one hand before filtration by heating in a conventional manner, and on the other hand the apparatus and the porous body.
For a good yield, it is necessary that the suspension which will be subjected to the tangential filtration is not too concentrated, because then the filtration is slow or requires clearly high pressures; as on the other hand, it has been observed that coagulation is not done or is done very slowly if the suspension is too dilute, it is preferable to provide that the process according to the invention is carried out on an aqueous extract having a concentration of 30 to 150 g / l of dry matter.
We will now give the results of practical examples of treatments according to the invention, illustrated by a single figure which is a diagram of the installation. In all cases, an aqueous soybean extract was started from the grinding of seeds followed by suspension in water and coarse filtration. 10 liters of water per kg of dry seeds were used.
Cet extrait avait les caractéristiques suivantes
Matières sèches totales (MST) : 4,5 g/100 ml
Matières azotées totales (MAT): 2,5 s/lOOmpl dont 0 1 g/100 ml de matières azotées non protéiques. This extract had the following characteristics
Total dry matter (STD): 4.5 g / 100 ml
Total nitrogenous matter (MAT): 2.5 s / lOOmpl of which 0 1 g / 100 ml of non-protein nitrogenous matter.
The extract, without having been subjected to coagulation, was introduced into the feed tank 1 of the test installation shown in the figure.
In this figure, it can be seen that the product circulates in a closed circuit thanks to a pump 2 between the filter 3 and a heat exchanger 4. Manometers 5,6 placed at the inlet and at the outlet of the filter, a flow meter 7 and a thermometer 8 allows the control of the operation; 9 designates a refrigeration-heating unit to maintain the desired temperature. The suspension is introduced into the circuit at the temperature chosen for the operation.
porous pierced with 3.5 mm diameter channels, internally lined with a 0.2 micrometer pore alumina layer which constitutes the filter proper (marketed by
CERAVER in Tarbes). In this test, the surface of the porous body was 0.155 m2, its diameter 3.5 mm and its length 750 mm.
