Abstract

Appts. for blanching, concentrating, drying, dehydrating or chilling foodstuffs involves a conveyor passing through a series of enclosures in which the heating and ventilation rates can be adjusted to suit the process and the prod. The appts. incorporates at least two forced ventilation units, steam injection for the blanching unit, heat exchangers spaced to provide a logarithmic temperature profile in the drying tunnel. The entrained air may be filtered, for hygienic reasons. The exhausted air may be chilled to condense out entrained moisture before possible re-use. Air in the prod. chilling chamber is pref. recycled countercurrent to the passing food. Can be set for various different treatment cycles, e.g. blanching and drying pastes or drying and dehydrating fruits and vegetables, in a single process.

La présente invention concerne une chaine en tunnel avec tapis transporteur, permettant le blanchiment, l'dvapora- -tion, le séchage et le refroidissement de produits alimentai -res (P1. I/4) avant leur conditionnement dans une enceinte, ainsi que le séchage et la déshydratation de végétaux à l'état naturel.(Pl. I/4 et PI. IV/4)
Chaque opération citée, peut être élaborée séparément en fonction de la composante produit, ou faire ltobjet d'une chaine continue, dans laquelle les quatre transformations sont simultanées.

Cette opération se déroule dans un tunnel bien calo -rifugd et de petit volume, (P1. III/4 rep.14) la projection de vapeur perdue à 70/800 sur le produit, est proportionnelle dans le temps de passage avec le débit massique linéaire. (Pl.I/4)
Opération Evaporation : (Pl.II/4 rep. 8.9.10)
Après le passage en tunnel de vapeur suspendue, il est nécessaire d'évaporer par extraction,(rep.IO) l'air saturé d1humidité, ainsi que le produit, qui sera ventilé pendant son passage dans le caisson, (rep.8) de cet échange thermique un condensat sera récupéré en partie basse dans un cuvelage (rep.I2)
Le ventilateur axial d'extraction (rep.IO) est équipé d'un modérateur,(rep.9) permettant de réguler le debit volumique et par ce faît la pression dynamique, point d'équilibre avec la masse volumique du produit et sa surface de prise à l'air.
