Abstract

The nuts are now peeled before being applied to the cheese. Pref. after peeling and prior to application, the nuts are roasted to give them a colour similar to their colour before removal of the peel. The peel can be removed by mechanical abrasion or by soaking the nuts in a liq. which detaches the peel by blistering.
