Abstract
For the manufacture of the alcohol-free wine, a sulphite treatment is carried out using sulphur dioxide and then the acidity of the vinasses is adjusted by addition of calcium carbonate; the quantity of copper and iron is then adjusted by addition of ferrocyanide. The alcohol-free wine permits the manufacture of vermouth, alcohol-containing wine, concentrated must, fortified wine or vinegar.
