Abstract

The mincing machine has a frame with a horizontal part with horizontal guides (4) between which the block of edible substance (3) is fed towards the cutter (9). This cutter is a horizontal screw at right angles to the direction of advance of the block. This screw is positioned inside a vertical frame part (1) with the control panel (18) on top with the drive motor (17) behind it. This drive motor is preferably pneumatic, but under suitable conditions could be electric or hydraulic. The screw is raised and lowered against the face of the block as it rotates to make its cut. The machine may be used for mincing large blocks of compressed meat for mass production of food portions in food preparation plant, but more particularly for mincing blocks of cheese, for the manufacture of pizzas (21). The design of the cutter ensures an even spread of granulated cheese over the surface of each pizza. The tendency of cheese to stick to the cutter is avoided, and the cutter suits a variety of meat products.
