Abstract

Cheese mould comprises a base, side walls and a cover; a metallic gauze is fixed between the cheese and at least one of the walls so that the expressed whey can circulate to arrive opposite evacuation holes in the wall. The closely woven mesh does not allow the cheese to penetrate into the gauze. The mould comprises a base, side walls and a cover. The side walls are provided with drainage holes for the evacuation of the whey. A movable sheet of metallic gauze is fixed between the cheese and the walls. The expressed whey which has penetrated the gauze can circulate until it reaches one of the drainage holes. Such holes can also be provided in the base to accelerate drainage of the whey. Grooves may be worked in the base and side walls to expedite drainage. With the new mould extn. of the whey is effected just as efficiently as with more costly moulds made from thin perforated plates. Lower pressures can be used, within the range 10-50 g/cm2. In addition there is no need to turn the moulds over.
