L'invention concerne un procédé de préparation de L-sérine. Il s'agit d'un procédé pour la préparation de L-sérine, caractérisé par le fait que l'on transforme du glycocolle en L-sérine dans un milieu aqueux contenant du glycocolle en présence de cellules microbiennes d'un mutant appartenant au genre Nocardia capable de transformer le glycocolle en L-sérine et n'ayant qu'une aptitude faible ou nulle à décomposer la L-sérine et/ou présentant une certaine résistance à l'un au moins des antagonistes métaboliques choisis parmi ceux du glycocolle, de la sérine, de la methionine, de la glutamine, de l'histidine, de la leucine, de l'isoleucine, de la valine, de la purine, de la pyrimidine ou de l'acide folique, on accumule la L-sérine dans le milieu et on la recueille à partir de celui-ci.
