Abstract

L'invention concerne un procédé de séparation et de récupération de gluten vital de froment à partir de farine de froment et de produits similaires. Un mélange de gluten vital de froment et d'amidon contenant au moins 25 % de protéine, par exemple une fraction riche en protéine provenant de farine de froment, est traité par une alpha-amylase d'origine bactérienne (de préférence pratiquement exempte de protéase) dans des con itions telles que l'amidon est solubilisé sans que soit indûment solubilisé ou dénaturé le gluten vital. La température ne doit pas excéder 60 degrés C et la durée du traitement ne doit pas dépasser 6 heures.
