Abstract

Prepn. of aq. mushroom extract comprises chopping mushrooms with an equal weight of H2O, macerating in hot H2O pressing and filtering. The clear liq. obtd. is bottled and sterilised at 120 degrees C for 30 mins. Maceration is pref. at 40-50 degrees C for 5 mins. or 90 degrees C for 2 mins. The process is esp. suitable for cultivated mushrooms. The extract cam be stored for a year or more and retains its flavour.
