Abstract

Treatment of a vegetable material to obtain a food compsn. having a higher protein content and lower glucide content than the starting material, comprises reacting it with >=1 enzyme capable of liberating short chain oligosides, heating, and reacting with >=1 food yeast. Protein isolates and concentrates are novel which may be obtained from the above compsn. The food compsns. for animals and humans have a high nutritional value. The process enables the enrichment of a wide variety of cheap vegetable materials e.g. beans, potato and tapioca. The treatment, esp. the pretreatment, results in the destruction of anti-nutritional substances such as antitrypsin factors.
