Anthocyans, useful as foodstuff colourings, are obtd. by extraction of grape marc or similar by-producing of the wine industry, to give a clear soln., treating this with an adsorbant resin or a weakly basic anionic resin and eluting with a soln. contg. a ketone, an amide or an aq. soln. of an alkali(ne earth) hydroxide.
