Abstract

Cheese die with a base and with breaks in the wall to allow the whey to drain off where the base (2), on its inner face (3) has drain grooves (10, 11) which extend outwards from the base middle and pass through the die casing (1). There are also drain grooves (11) on the base outer face (4) and these are transposed with respect to those on the inner face (3). Specifically, the grooves deepen or expand towards the outside. A circumferential fold (5) on the outer face of the base (2) is used to centralise another die set on it. On the opening side, the cheese die also has a circumferential flange (15) with a guide face (16).
