Abstract

A milk coagulant contg. 46.4-52.8% Berridge units/ml contains 73-78% pig-derived pepsin, 13-22% microbiological rennin and 0.17-5: bovine rennin (all % in wt/vol.) stirred into an aqs. soln. contg. (15-17% CaCl2 and 50% polyhydric alcohol with a pH set to 5-5.4. The polyhydric alcohol may be glycerol, mannitol, arabitol, xylitol, sucrose or pref. sorbitol. In an example, the ranges for microbiological rennin and bovine rennin are 10.5-22 and 0.17.5% respectively.
