Abstract

Cream is emulsified with compressed air within the pipe and whipped cream delivered from a nozzle is used in bakers confectionery prods. desserts etc. The pipe contains a static mixing element in the form of a porous packing made of flexible, synthetic plastic thread knitted in open-weave, cross mesh. The mesh sheet is pref. rolled to form a cylinder to push into the pipe. The whipped prod. is dispensed directly from the mixer to the finished food prod. without intermediate collection and storage. The whipped cream can be delivered at any angle and any location within range of the pipe and it is quite homogeneous. It also holds its formation as dispensed.
