Abstract

The ion exchange resin replaces Ca and K ions in the juice by Na and Mg ions. A means is provided for regenerating the resin and for correcting variations in H+ concn. (by passage through H+ exchange resin). The treatment eliminates the need for prolonged storage (normally 15-20 days at 0 degree C) and the amt. of treatable juice is 100 times the resin vol. Suitable resin is sulphonated crosslinked styrenedivinyl benzene and is enclosed between two layers of inert material (quartz granules).
